Thai-Style Sesame Crusted Prawn Toast Crumpets

with Lime Leaf mayo and Nam Jim Dipping Sauce.

Nam Jim Dipping Sauce

  • 1 ½ Tbsp jasmine rice

  • 1 small shallot, very finely diced  

  • 1 mild red chilli, finely chopped 

  • 3 large cloves garlic, minced   

  • 2 heaped Tbsp finely chopped coriander stems (save the leaves for the prawn toast)

  • ¼ cup freshly squeezed lemon or lime juice 

  • 3 Tbsp caster sugar 

  • 2 Tbsp each fish sauce & cold water 

  • 1 tsp chilli flakes 

Lime Leaf Mayonnaise:  

  • ⅓ cup Japanese mayonnaise 

  • 2 Makrut lime leaves, very very finely chopped 

  • Zest of 1 small lime + ½ tsp lime juice 

  • ½ tsp each caster sugar & fish sauce 

Crumpet Prawn Toast: 

  • 500g frozen raw prawn meat, defrosted 

  • 1 small shallot, peeled & roughly chopped 

  • 2 fat cloves garlic, peeled 

  • 1 thumb-sized piece ginger, peeled & roughly chopped 

  • 1 handful (about ½ cup) coriander leaves

  • 1 medium free-range egg white (I used a size 7 egg) 

  • 3 Tbsp cornflour (corn starch) 

  • 1 Tbsp fish sauce 

  • 1 tsp each toasted sesame oil & caster sugar 

  • ⅓ cup each panko breadcrumbs & white sesame seeds 

  • 2 packs Golden Crumpets rounds (12 crumpets in total)

  • Olive oil, for cooking 

To Serve (optional): 

  • 2 spring onions, dark green part only, thinly sliced into rounds 

  • Finely chopped chives, toasted sesame seeds & chilli flakes, to garnish

Preheat your air fryer to 180°C.

Nam Jim Dipping Sauce: Heat a small dry frying pan over medium heat. Add the rice and toast for 3–4 minutes, tossing often, until golden brown. Transfer to a mortar and pestle and grind to a fine crumb (or pulse briefly in a NutriBullet). Combine with the remaining ingredients in a jar or small bowl. Set aside to serve. 

Lime Leaf Mayonnaise: Combine all ingredients together in a small bowl, making sure the lime leaves are very finely chopped. Set aside to serve. 

Crumpet Prawn Toast: Pat the prawns dry with a paper towel to remove excess moisture. Add the shallot, garlic, ginger and coriander to a food processor and pulse about 10 times, until finely chopped. Add HALF of the prawns, along with the egg white, cornflour, fish sauce, sesame oil and sugar. Blend for about 45 seconds, or until a smooth paste forms. Add the remaining prawns and pulse 4-5 times, until the second addition of prawns are roughly chopped and evenly distributed. Transfer to a medium bowl and fold through the breadcrumbs.

Using a sharp knife, trim the domed tops off the crumpets to create a flat surface. Divide the prawn mixture between half the crumpets, spreading it evenly over the cut side. Top with the remaining crumpets, cut side down, to sandwich. Use a palette or butter knife to smooth the filling around the edges. Sprinkle the sesame seeds onto a plate and roll the sides of the stuffed crumpets in the sesame seeds to coat. Arrange in the air fryer basket and drizzle generously with olive oil on both sides, brushing the oil into the crumpets with a clean pastry brush. Air fry for 18-20 minutes, or until golden and crispy, and the filling is cooked through.

To Serve: Drizzle with the lime leaf mayonnaise. Garnish with spring onion, chives, sesame seeds and chilli flakes, if using. Serve the nam jim on the side for dipping.
