Caramelised Smashed Ratatouille with Butter Roast Chicken
This recipe is a great way to use up a few late-summer vegetables - the smashed ratatouille was so ridiculously good that it quickly became the star of the whole meal. Roasting the vegetables hard and fast gives them plenty of colour and caramelisation before they're mashed into a chunky, spoonable spread with olive oil and balsamic vinegar. Alongside it, there's butter-roasted chicken with crispy golden skin and plenty of pan juices, plus creamy haricot beans cooked with shallots, anchovies, white wine and a little crème fraîche. The anchovies melt away completely, leaving behind a rich savoury flavour.
